BLACK BEAN BROWNIES
These black bean brownies are so delicious! Make these for the whole family! They won't be able to tell there are black beans hidden inside!
Ingredients:
- 2 Flax Eggs (2 Tbsp Ground Flaxseed Meal + 6 Tbsp Hot Water)
- 2 15oz Cans Black Beans ( rinsed and drained)
- 1/2 cup vegetable oil
- 1/4 c unsweetened almond milk or any other dairy free milk of choice
- 2 tsp Vanilla Extract
- 1/2 cup All Purpose Flour
- 3/4 cup Unsweetened Cocoa Powder
- 1 and 1/2 cups granulated sugar or sugar alternative ( date syrup or honey)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground coffee
- 1/2 cup of dairy free chocolate chips
- 1/3 cup of peanut butter ( optional)
Directions:
- Preheat the oven to 350°F
- Grease a small 9X9 pan
- Combine the 2TBS of flax seed with 6TBS of hot water and set aside for 5 minutes. The mixture will become thick after it sits. This is your flax egg.
- Drain and rinse the black beans and set aside.
- Combine the flour, coco powder, sugar, baking powder, coffee, and salt together.
- After the flax egg has become thick add the black beans, vanilla, almond milk, and vegetable oil together and blend in a food processor for 1 minute until combined. You may have to scrape down the sides and continue processing to make sure everything is blended.
- Add the black bean mixture to the dry ingredients.
- Mix for 1 minute until combined. If the mixture is too thick add a little water. Do not overmix.
- Add chocolate chips
- Pour batter into the greased dish
- Using a knife swirl the peanut butter mixture throughout the brownies
- Bake for 40 minutes
- Not sure if the brownies are done? Insert a toothpick into the center of the brownies. When the toothpick comes out clean, that's when you know they will be ready!
Tips/Tricks:These store great for about a week and a half. This recipe makes about 12 decent size brownies!
