3 LAYER OREO CHOCOLATE CHIP BLACK BEAN BROWNIES

These brownies are incredible. These three layered brownies are 100% vegan and include chocolate chip cookie dough and Oreos! The best part is, the kids won't know there is black beans hidden inside of them!

Ingredients:



 Brownie Layer

  • Flax Eggs (2 Tbsp Ground Flaxseed Meal + 6 Tbsp Hot Water)
  • 2 15oz Cans Black Beans ( rinsed and drained)
  • 1/2 cup vegetable oil
  • 1/4 c unsweetened almond milk or any other dairy free milk of choice
  • 2 tsp Vanilla Extract
  • 3/4 cup All Purpose Flour
  • 1 cup Unsweetened Cocoa Powder
  • 1 and 1/2 cups granulated sugar or sugar alternative ( date syrup or honey)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground coffee



Chocolate chip cookie layer

  • 1 1/2 cups gluten-free 1:1 baking flour blend or all propose flour if no gluten sensitivity
  • 1 tsp salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup original smart balance butter ( or other dairy free butter of choice)
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/4 C unsweetened vanilla almond milk
  • 1 tbsp of vanilla extract
  • 1 2/3 cups (10-ounce package) NESTLÉ® TOLL HOUSE® Allergen Free Semi-Sweet Morsels


Oreo layer

  • 12 Oreos



Directions:


Make the Brownie Layer:

  1. Preheat the oven to 350°F
  2. Grease a large pan
  3. Combine the 2TBS of flax seed with 6TBS of hot water and set aside for 5 minutes. The mixture will become thick after it sits. This is your flax egg.
  4. Drain and rinse the black beans and set aside.
  5. Combine the flour, coco powder, sugar, baking powder, coffee, and salt together.
  6. After the flax egg has become thick add the black beans, vanilla, almond milk, and vegetable oil together and blend in a food processor for 1 minute until combined. You may have to scrape down the sides and continue processing to make sure everything is blended.
  7. Add the black bean mixture to the dry ingredients and mix for 1-2 minutes until combined. Do not over mix. If you need to add a little bit of water due to the thickness of the mixture, feel free.
  8. Set aside and make the cookie layer


Make the Cookie Layer

  1. Add the brown sugar, sugar, and butter, to a mixer and beat them together until creamy. About 1-2 minutes.
  2. Add almond milk and vanilla. Mix for 2-3 minutes.
  3. In a separate bowl, add the all purpose flour, baking soda, baking powder and salt and mix together.
  4. Add the dry ingredients to the wet and mix until combined. Do not over mix.
  5. Add chocolate morsels and mix until combined.


Combining the layers

  1. Grease a 9x13 baking dish
  2. Add the cookie layer to the dish as the bottom layer, spreading evenly.
  3. Add the Oreos over the cookie layer
  4. Add the black bean brownies mixture on top
  5. Place in oven for 35-40 minutes
  6. Test the brownies with a toothpick or a knife prior to removing. Whichever you use should be clean upon removal. That's how you know they are done!
  7. Remove from oven and cool for 10 minutes prior to cutting/serving
  8. ENJOY!



Tips/Tricks:  These store great for about a week and a half. This recipe makes about 12 decent size brownies!

These brownies pair perfectly with a scoop of dairy free cool whip, dairy free ice cream, or a glass of dairy free almond milk! These brownies are a delicious dairy free dessert option when those sweet cravings kick in! We love storing these in the freezer for a nice evening treat.
