VEGAN TOMATO SOUP
This dairy free/vegan tomato soup is a perfect pair with a dairy free grilled cheese!
Dip that vegan grilled cheese in this creamy soup for a delicious pair that will have your mouth watering for more!
Ingredients:
- 1 TBS Sugar
- 1 28oz can of Muir Glen crushed tomatoes
- 1 can of coconut milk
- 2 TBS of olive oil or water
- 1 medium onion diced/minced
- 2 cups of vegetable broth
Directions:
- In a large pot, sauté the onion in the olive oil (or water) for 5-6 minutes over medium heat, until soft and translucent.
- Add the crushed tomatoes and vegetable broth and stir. Bring to a boil, then lower heat and simmer for about 20 minutes.
- Use your blender to blend the soup. Carefully return the soup back to the pot.
- Add 1 can of coconut milk and 1TBS of water and simmer for 15-20 minutes
Notes:
This is our favorite soup to pair with our Vegan grilled cheese. This is one the whole family will enjoy! We love to dip our sandwich in this creamy soup before each delicious bite!
