Ingredients:
- 2 Flax eggs (2 TBS ground flax seed + 6 TBS of warm water )
- 4-5 large ripe bananas, mashed.
- 1 cup of smart balance original butter or other vegan butter of choice.
- 1/2 cup of local honey
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 c chopped walnuts
Cinnamon Sugar Swirl
- 1/4 cup of plant based butter of choice ( we use smart balance original) *
- 1/2 cup of organic cane sugar
- 2 tablespoons ground cinnamon
Directions:
- Preheat the oven to 350°F
- Prepare the flax egg. Combine flaxseed meal and water, set aside for 5-10 minutes.
- Sift the flower
- In a medium sized bowl combine flour and baking soda
- Mash the bananas with a potato masher or fork.
- Add the mashed banana, honey, 1 cup of butter( softened) , vanilla, and flax egg to the mixing bowl and mix until combined.
- Stir in 1/2 cup of walnuts
- In a small bowl, use a fork to stir together the cinnamon sugar swirl ingredients ( 1/4 cup of butter. sugar. and cinnamon) until thick and well combined.
- Grease a 9×5 loaf pan or Bundt pan.
- Spread 1/2 of the batter evenly into the bottom of the prepared pan.
- Sprinkle half of the of the cinnamon sugar mixture over the batter in the pan and make a nice thick swirl through the batter with a knife or bottom of a spoon.
- Place the remainder of batter over the first layer and swirl with remaining cinnamon sugar mixture.
- Make large swirls throughout the entire loaf and op with the remaining walnuts ( about 1/4 cup)
- Place into the oven and bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Cool on a wire rack for 30 minutes prior to serving!
NOTES: We also love adding these Vegan Chocolate chips to this recipe!
Tips/ Tricks: Make this bread at the beginning of the week and cut a fresh slice each morning! Stevie loves this banana bread toasted in the toaster oven with smart balance original butter melted right on top. We also love serving this banana bread with a scoop of maple walnut ice cream or dairy free cool whip!
