NO BAKE CHOCOLATE PEANUT BUTTER DAIRY FREE EGGS

These are guilt free and absolutely delicious! Keep them in the freezer when those sweet cravings kick in!

Ingredients:


For the peanut butter mixture:

  • 1/2 cup of peanut butter
  • 1 tbsp. maple syrup
  • 1 tbsp. honey
  • 1tbsp coconut flour/almond flour/regular flour
  • 1tsp unsweetened coco powder


For the chocolate coating:

  • 1 tbsp. coconut oil
  • 2 tsp unsweetened coco powder
  • 1 tsp of honey1 cup 



Directions:

  1. In a medium sized bowl combine the peanut butter, maple syrup, honey, flour. Mix until batter is formed, this should be thick.
  2.  For Easter we shaped these into eggs! Using your hands take about 2 tbsp of the batter and form it into desired shape. You can also just roll into a ball if it's not Easter :). Arrange the dough in desired shape on a plate or pan lined with parchment paper. 
  3. Place in the freezer for 5-10 minutes.
  4. While the peanut butter is in the freezer, melt the coconut oil.
  5. Combine the coconut oil, honey, and coco powder together. Whisk until combined.
  6. Remove the the peanut butter layer from the freezer and dunk each one into the melted chocolate. Make sure they are completely coated. Return the chocolate covered pieces to the parchment paper, and spoon any additional chocolate over the tops for a thicker chocolate coating.

  7. Allow to set in the freezer for at least 10 more minutes before serving.

We also love using local honey from Hilltop Apiaries which is located in CT. Make sure to use dark 70% cacao or higher when selecting a chocolate for this recipe. We also use these chocolate morsel and melt them down quickly in the microwave. Feel free to experiment and try other dairy free chocolate brands to see what you like best. We use our homemade peanut butter for this recipe. If you are looking to use store bought peanut butter, give it a try as it will speed up the process.
