MAKE AHEAD SALADS

It's easy to make excuses when you are not prepared. Don't let that be you! Make these salads a head of time and stay on track!

Ingredients:


  • Iceberg Lettuce -1 head
  • Baby arugula - 2 cups
  • Shredded Carrots- 2 Large
  • Celery -2 ribs diced
  • Cucumber -2 Diced
  • Kalamata Olives- 20
  • Whole dried cranberries-8 TBS
  • Walnuts -4 TBS
  • Chopped Feta Cheese or vegan shredded cheese -8 TBS
  • Avocado - 2 small diced
  • Plum Tomato 2 diced
  • Broccoli 1 cup diced
  • Salt To Taste
  • Pepper To Taste
  • Sprinkle Garlic Powder
  • Oregano 4 TSP
  • Croutons * - 8tbs



Dressing:


Olive Oil 2 TSP 
Spray ½ tsp. on each before serving

Balsamic Vinegar 4 TBS


Pair with:


  • Boca Chicken Patty Fully cooked -Cut up 1 fully cooked patty over each before serving ( Vegan/Vegetarian)
  • Lean Chicken Breast



Directions:


  1. Set up 4 bowls/containers that you will want to store each individual salad in. 
  2. In one large bowl combine lettuce, baby arugula, carrots, celery, cucumber, olives, cranberries, walnuts, feta or vegan shredded cheese ( linked above), tomato's, broccoli, salt, pepper, garlic powder, and 4 tbs of oregano. Toss 3 or 4 times using salad hands. Cover with reusable plastic wrap.
  3. Before serving, add 1 tbs of balsamic and if you are using an olive oil spray bottle. Spray 2-4 times, if you are not using a spray bottle, add 1 to 2 tsp.
  4. Add fully cooked boca chicken patty.

 
*Notes:  We use this olive oil spray bottle the bottle dispenses 1/4 teaspoon of oil per trigger pull in a unique fan pattern that covers more cooking surface with less oil. Omit croutons if you are vegan or find one that does not contain milk. You can also make your own! We love using our kitchen aid food processor to do the vegetable chopping for us.
