STEVIE SALAD

It's easy to make excuses when you are not prepared. Don't let that be you! Chop your vegetables at the beginning of the week to save time and eliminate any excuses!

Ingredients:


  • 3-4 cups of spring mix
  • 1/4 c Shredded Carrots- 2 Large
  • 1/4 c Celery -2 ribs diced
  • 1/4 c Cucumber -2 Diced
  • 1/4 c Green Olives
  • 1/4 c Red, yellow, or green peppers diced
  • 2 TBS Whole dried Cranberries
  • 2 TBS Pumpkin seeds
  • 1/2 Avocado diced
  • 1/4 c diced tomatoes or cherry tomatoes
  • 1 tsp Nutritional Yeast
  • Sprinkle Garlic Powder
  • Sprinkle of Oregano
  • 1/2 cup of Garbanzo beans
  • 1/4 cup of Black beans
  • 1/3 cup of Quinoa
  • 1/4 cup go Veggie mozzarella shredded




Dressing:


Olive Oil 2 TSP Spray ½ tsp. on each before serving

Balsamic Vinegar 1 TBS

*or any other healthy alternative of choice


Pair with:

 

  • Boca Chicken Patty Fully cooked -Cut up 1 fully cooked patty over each before serving ( Vegan/Vegetarian)
  • Lean Chicken Breast ( Meat Eaters)
  • Grilled/Steamed Shrimp
  • Salmon
  • Hard Boiled Eggs
  • Buffalo Tofu



Directions:


  1. Set up 2 bowls/containers that you will serve the salad in.
  2. Evenly distribute the ingredients between both bowls!
  3. Before serving add 1 tbsp. of balsamic and if you are using an olive oil spray bottle. Spray 2-4 times, if you are not using a spray bottle, add 1 to 2 tsp ( repeat for each salad)
  4. Add fully cooked boca chicken patty, lean protein, cheese, or shrimp ( if desired)!

 
*Notes:  We use this olive oil spray bottle. The bottle dispenses 1/4 teaspoon of oil per trigger pull in a unique fan pattern that covers more cooking surface with less oil. Omit croutons if you are vegan or find one that does not contain milk. You can also make your own! We love using our kitchen aid food processor to do the vegetable chopping for us.


Tips/Tricks: Try dicing the vegetables at the beginning of the week, Having them in the fridge already ready to go makes dinner prep very simple! We love chopping our celery, carrots, peppers, and cucumbers on Sunday's so they are easily accessible. Say GOODBYE to those excuses. Order your chopper now!
