Ingredients:


  •  1 1/2 cups gluten-free 1:1 baking flour blend or all propose flour if no gluten sensitivity
  • 1 tsp salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup original smart balance butter ( or other dairy free butter of choice)
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/4 C unsweetened vanilla almond milk
  • 1 to 2 tablespoons vanilla extract
  • 1 2/3 cups (10-ounce package) NESTLÉ® TOLL HOUSE® Allergen Free Semi-Sweet Morsels
  • 1 16oz container of So Delicious Dairy Free Coconut Milk Frozen Dessert Vanilla Bean 


Directions:


  1. Preheat the oven to 350°F
  2. Add the brown sugar, sugar, and butter, to a mixer and beat them together until creamy.
  3. Add almond milk and vanilla. Mix for 2-3 minutes.
  4. In a separate bowl, add the all purpose flour, baking soda, baking powder and salt and mix together.
  5. Add the dry ingredients to the wet and mix until combined. Do not over mix.
  6. Add chocolate morsels and mix until combined.
  7. Roll the dough into balls and bake for 10 minutes. If you want them a little crispier we recommend leaving them in the oven a little longer ( 12-13 minutes).
  8. Cool the cookies completely
  9. Scoop 1/3 cup of dairy free so delicious ice cream on top of 1 cookie and place another cookie on top making a sandwich
  10. Repeat until all cookies and ice cream have been used!
  11. Wrap them in parchment paper and stick them in a container and freeze for a nice afternoon or bedtime treat!


Tips/Tricks: We use smart balance original butter when making these cookies as they provide the best taste ( in our opinion). Feel free to use any dairy free butter you prefer. We love dunking our cookies in a glass of unsweetened almond milk for a delicious afternoon snack or after dinner treat. These store great for about a week and a half. This recipe makes about 36 cookies!
