VEGAN GLUTEN FREE WAFFLES
These waffles are perfect for a slow moving Sunday morning. They are soft on the inside and crispy on the outside. Pair this with dairy free whipped cream and fresh fruit!
Ingredients | Quantity |
---|---|
Gluten Free Flour ( or all Purpose if not GF) | 1 1/4 C |
Baking Powder | 1 1/2 tsp |
Ground Flax seed ( for flax egg) | 1 TBS + 3 TBS of water |
Unsweetened Almond milk | 1 1/4 C |
Coconut oil | 2 TBS melted |
Vanilla Extract | 2 tsp |
Sugar or sugar alternative | 1/3 C |
Unsweetened apple sauce | 1/4 C |
Salt | 1/2 tsp |
Directions:
- Preheat your waffle iron
- Prepare flax egg. Combine 1tbs flax with 3 TBS of water. Let this sit for 5 minutes.
- Sift the flour into a bowl and add the baking powder, salt and sugar. Then add the flax egg, apple sauce, almond milk or other non-dairy milk, coconut oil (melted) and vanilla, Whisk with a hand whisk to remove any lumps or use a kitchen aid mixer. The batter will be thin.
- When your waffle maker is ready, grease, and then pour the batter onto the waffle iron. Add enough where the whole iron will be covered once you close the lid.
- Allow to cook for 5-7 minutes until golden and crispy.
- Serve with dairy free cocowhip or non-dairy reddi-whip, smart balance original butter, fresh fruit, and maple syrup.
